Dodging and parrying attacks is the core of Stellar Blade’s combat loop, and the fight against Raven in Stellar Blade is no exception. Raven can use a chain of combos, which will require multiple parries to defend against.
Parrying is almost always better than blocking, as it has a chance to stagger the enemy and leave them vulnerable for a Retribution, which can take out a large chunk of their HP. On the other hand, unblockable attacks (as indicated by a yellow flash) cannot be parried and are meant to be dodged.
