An authentic Greek street-food restaurant which is a favourite of the country's Liverpool star, Kostas Tsimikas, is opening another venue in the new year.
Laros, which already has locations in Bold Street, Mossley Hill and Manchester, is run by Greek owner Nikolaos Fylladitakis, who sources as much of their produce as possible from the ancient land of Zeus and Aphrodite. The 'proud Greek' says Laros, which means 'delicious', needs to be not just good, but great, while ensuring authenticity and staying true to itself.
In the weeks prior to their new venue opening in Blackstock Market, Nik spoke to the ECHO about Laros's history, the importance of their food, and plans for the future. Originally from the Greek island of Crete, Nik described the moment his love of food began: "My first job was in a vegetable market when I was 14. It was here I got to know what was good and what was not so good in the world of vegetables. My dad had greenhouses where we would grow fresh produce: tomatoes, cherry tomatoes, cucumber, peppers."

As he began to get older, Nik would work in the hospitality sector, taking jobs in bars, restaurants and tavernas, until he moved to the Greek capital, Athens. He said: "When you go to a big city like Athens, it has a much bigger food scene.After Athens, I moved to Switzerland for a while before coming to Liverpool in 2014."
Nik's first few years in Liverpool were spent directing restaurants and working in the hotel business. After a while, he wanted to go off on his own.
