An award-winning butcher is set to open his first restaurant in Merseyside next month, promising refinement and insisting it will "not be a steakhouse".
Jonny Farrell, owner of dry-aging specialists Butcher Farrell's Meat Emporium in Ormskirk, is expanding his brand with Butcher Farrell's Bar and Grill in the heart of Birkdale Village. Unsurprisingly, there will be a large focus on meat dishes, with the butcher wanting "really simple, really nice and really well-executed food which lets the meat shine through".
Butcher Farrell's Meat Emporium supplies produce to some of the top restaurants in the region, including Belzan on Smithdown Road, Manifest in the Baltic Triangle and Michelin-starred Sō-lō in Aughton. It also won New Butchery Business of the Year back in May 2023. Jonny has "always wanted to open a restaurant" and now looks poised to achieve this objective in "hopefully mid-February".

In the run-up to the opening, Jonny spoke to the ECHO. He said: "The butcher has always been focused on high-welfare meat which we get directly from farms - and we've worked hard to build our reputation.
"We're picking up that model but bringing it from a raw meat perspective to a cooked meat perspective. Dishes will be refined and carefully created, with the same detail and thought as is given at the butcher, but in a restaurant setting.
"There will be a great selection of wine, dry-aged meat and we're bringing in a charcoal grill. We will also be serving fish and vegetarian plates.
